I would like some advise on the following:
Should I let Google Search Console crawl my specific product sitemaps? Since I have a big webshop with over 8000 items and I got some 404 alerts in Search Console since some products are deleted from the collection each week.
I am using the Yoast SEO plugin and I've added the sitemap_index.xml to Google Search Console. In the settings in the Yoastplugin it is set that all parts of the sitemap (taxonomies) should be crawled.
I don't want Google to punish me for this matter, so I thaught about changing the settings in the Yoast plugin to ''not crawl product pages in the sitemap'', but in that case it will not crawl any productpages at al.
What would you guys recommend?

Never prevent the crawling of your products sitemap! Perhaps you can install a "redirect 404's to homepage" plugin?

Redirecting to a non-relevant page (i.e. your homepage) makes no sense, Google will treat it as soft 404s and you might lose some (or all) page-reputation.
You rather redirect to a relevant page or set up a good 404 (dynamic) page.

Indeed, the homepage is totally irrelevant. That is why well ranking websites don't have a homepage.

But always better than a real 404. Of course you can also log the 404's and redirect them properly to a similar page/product, with a plugin like this one: https://nl.wordpress.org/plugins/redirection/.

The amount of Mickey Mouse bullshit that Google advised webmasters to do, is enormous.
I believe in the results of case studies, not peepholes like the former head of Google webspam, Matt Cutts.

Je draagt niets nieuws aan. "Volgens Google"...
De basic SEO handleiding van Google is goed. Dit soort waarschuwingen zijn meestal BS.
Tot dat Larry of Sergey mij persoonlijk uitleggen waarom ik iets op een bepaalde manier moet doen negeer ik het.

Just curious: Why post in English while your name is Dutch and you produced a typo (thaught = thought) a native english (as I presume) wouldn't have made(?)
